Apple Fritters

Yeast Doughnut Dough:

3c All Purpose Flour

1/4c Sugar

1/2 tsp Salt

2 tsp Active Dry Yeast

1/4 tsp Nutmeg

1 Egg

1c Milk

2 TBSP Butter, Melted

1 tsp Vanilla Extract

Apple Fritter Filling:

2 TBSP Butter

3 TBSP Sugar

1/2 tsp Cinnamon

1/4 tsp Salt

1/4 tsp Vanilla Extract

2 Apples, peeled, cored and chopped

Apple Fritter Glaze:

4c Powdered Sugar

1/4c Maple Syrup

2 TBSP Honey

1/2c Water

1 tsp Vanilla Extract

1/2 tsp salt

METHOD

To make the dough: Heat your milk until just warm and stir in the active dry yeast to hydrate. Let stand for about 5 minutes to activate it. (You want to be careful to make sure the milk is not too hot) In a mixing bowl combine the egg, milk and yeast mixture and vanilla. Add the flour, sugar, nutmeg, salt and top with the melted butter. Using a dough hook, mix until dough forms, mix for about 5 minutes. Once mixed, transfer the dough to a greased bowl, cover with plastic wrap and let proof at room temp for 1-2 hours or until the dough has doubled in size.

To make the fritter filling: In a skillet combine the butter, sugar, cinnamon, salt, vanilla and apples. Cook over medium heat until the apples slightly soften and create a glaze.

Assembly: To make the fritters roll out the dough to about 1″ thickness. Spread the fritter filling over the top then roll the dough from the top down to form a log. Taking a knife, chop the log into strips, then chop the opposite direction. Be sure to use plenty of flour. Take out portions of the apple and dough mix and using flour create a patty shape. Place on a floured and parchment lined sheet pan, cover and let proof for about 20 minutes. Fry in a deep fryer at 350 until each side is a deep golden brown, about 90 seconds each side.) Once fried, transfer to a paper towel lined plate to cool.

To Make the Glaze: In a bowl combine the powdered sugar, maple syrup, honey, water, vanilla extract and salt. Whisk until combined. Once donuts are cooled, dip each side in the maple honey glaze.
